Speedy Saucy Chicken Bowls

When you need dinner on the table FAST, these Speedy Saucy Chicken Bowls swoop in to save the day! Quick-cooking chicken and your favorite stir-fry veggies get smothered in an irresistibly sweet and tangy sauce. It's an adaptable, flavorful meal that's easier than ordering takeout!

Ingredients

For the Chicken & Veggies

  • 1 tbsp olive oil or sesame oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets, small
  • 1/2 yellow onion, thinly sliced

For the Sauce

  • 1/4 cup soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup water or chicken broth

For Serving

  • Cooked rice or quinoa
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Preparation

  1. Step 1

    In a small bowl, whisk together all sauce ingredients (soy sauce, honey, rice vinegar, cornstarch, ginger, garlic, and water/broth) until smooth. Set aside.

  2. Step 2

    Heat olive or sesame oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 4-5 minutes, stirring occasionally, until lightly browned and mostly cooked through. Remove chicken from the skillet and set aside.

  3. Step 3

    Add red bell pepper, broccoli florets, and sliced onion to the same skillet. Cook for 3-5 minutes, stirring occasionally, until vegetables are tender-crisp.

  4. Step 4

    Return the cooked chicken to the skillet with the vegetables. Give the prepared sauce a quick whisk, then pour it over the chicken and veggies. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything beautifully.

  5. Step 5

    Remove from heat. Serve immediately over cooked rice or quinoa. Garnish with sesame seeds and chopped green onions.

Tips

  • Prep all your ingredients (chop chicken and veggies, mix sauce) before you start cooking, as this dish comes together very quickly.
