Ingredients

Yield: 4 servings

For the Chicken & Broccoli

  • 1 tbsp sesame oil or vegetable oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 cups broccoli florets
  • ¼ cup water or chicken broth

For the Peanut Sauce

  • ½ cup creamy peanut butter
  • ¼ cup soy sauce (low sodium preferred)
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • ½ tsp sriracha or chili garlic sauce (optional, for heat)
  • ¼ cup warm water, plus more if needed

For Serving (Optional)

  • Cooked rice or noodles
  • Sesame seeds
  • Chopped green onions or cilantro

Preparation

  1. Step 1

First, make the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sriracha (if using). Slowly whisk in ¼ cup warm water until the sauce is smooth and pourable. If it's too thick, add another tablespoon or two of water until desired consistency is reached. Set aside.

  2. Step 2

Heat sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.

  3. Step 3

Add the broccoli florets and ¼ cup water or chicken broth to the same skillet. Cover and steam for 3-5 minutes, or until the broccoli is tender-crisp and bright green.

  4. Step 4

Return the cooked chicken to the skillet with the broccoli. Pour the peanut sauce over the chicken and broccoli. Toss everything together until well coated and heated through, about 1-2 minutes.

  5. Step 5

Serve immediately over cooked rice or noodles, if desired. Garnish with sesame seeds and chopped green onions or cilantro.

Tips

  • Don't overcook the broccoli; it's best when it still has a slight bite.
  • Adjust the sriracha in the sauce to your preferred level of spice.
  • This dish reheats well for next day's lunch!
