- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 4 cups broccoli florets
- ¼ cup water or chicken broth
For the Peanut Sauce
- ½ cup creamy peanut butter
- ¼ cup soy sauce (low sodium preferred)
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp fresh ginger, grated
- 1 clove garlic, minced
- ½ tsp sriracha or chili garlic sauce (optional, for heat)
- ¼ cup warm water, plus more if needed

Step 1
First, make the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sriracha (if using). Slowly whisk in ¼ cup warm water until the sauce is smooth and pourable. If it's too thick, add another tablespoon or two of water until desired consistency is reached. Set aside.
Step 2
Heat sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
Step 3
Add the broccoli florets and ¼ cup water or chicken broth to the same skillet. Cover and steam for 3-5 minutes, or until the broccoli is tender-crisp and bright green.
Step 4
Return the cooked chicken to the skillet with the broccoli. Pour the peanut sauce over the chicken and broccoli. Toss everything together until well coated and heated through, about 1-2 minutes.
