  • 1 clove garlic, minced
  • 1/4 cup warm water or vegetable broth (to thin)

For the Stir-Fry

  • 1 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or green beans
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish

Preparation

  1. Step 1

    First, make the sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, ginger, and garlic. Gradually whisk in warm water or broth until the sauce is smooth and pourable. Set aside.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
