Ingredients

Yield: 4 servings

Main

  • 1.5 lbs boneless, skinless chicken breasts or thighs, sliced into strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Serving

  • Cooked rice or quinoa (optional)
  • Avocado, sliced or diced
  • Salsa
  • Sour cream or Greek yogurt
  • Fresh cilantro, chopped
  • Lime wedges

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

In a large bowl, combine the chicken strips, sliced bell peppers, and sliced onion. Drizzle with olive oil, then sprinkle with fajita seasoning, salt, and pepper. Toss everything until well coated.

  3. Step 3

Spread the chicken and vegetables in a single layer on the prepared baking sheet. Ensure they are not overcrowded; use two baking sheets if necessary to ensure even cooking and good browning.

  4. Step 4

Roast for 18-22 minutes, flipping halfway through, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp with some charred edges.

  5. Step 5

Remove from the oven. You can serve the fajita mixture directly from the pan. Divide into bowls, either on its own or over cooked rice/quinoa.

  6. Step 6

Top with your favorite fajita fixings like sliced avocado, salsa, a dollop of sour cream or Greek yogurt, fresh cilantro, and a squeeze of fresh lime juice. Enjoy your flavorful and easy fajita bowls!

Tips

  • Homemade fajita seasoning is easy! Combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and a pinch of cayenne.
  • For extra browning on the chicken and veggies, consider broiling for the last 2-3 minutes, watching carefully to prevent burning.
  • This recipe is great for meal prep! Cook a batch and divide into containers with rice for healthy lunches throughout the week.
