  • 2 large eggs, beaten
  • 1/4 cup milk or water
  • 1 tablespoon fresh lemon zest
  • 3 tablespoons olive oil or butter, divided
  • 2 tablespoons fresh lemon juice

Preparation

  1. Step 1

    Slice each chicken breast horizontally into two thinner cutlets. Place chicken between two sheets of plastic wrap and pound to 1/4-inch thickness using a meat mallet or rolling pin.

    Transfer cooked cutlets to a plate and loosely tent with foil to keep warm. Repeat with remaining cutlets, adding the remaining 1 tablespoon of olive oil or butter if needed.
