  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 zucchini, quartered lengthwise and sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced

Lemon Herb Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (for garnish, optional)

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the chicken pieces, red bell pepper, zucchini, cherry tomatoes, and red onion.

    In a small bowl, whisk together the olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper to create the dressing.

    Pour the dressing over the chicken and vegetables. Toss everything gently until well coated.

    Spread the chicken and vegetables in a single layer on the prepared baking sheet. Ensure there's a little space between pieces for even cooking and browning.

    Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp. If desired, you can broil for the last 2-3 minutes for extra browning.
