  • 1.5 lbs boneless, skinless chicken thighs (about 4-6 thighs)
  • 1.5 lbs baby potatoes, quartered or halved if large
  • 1 large lemon, half sliced, half for juice
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish, optional)

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    In a large bowl, combine the quartered potatoes, 2 tablespoons of olive oil, oregano, thyme, garlic powder, salt, and pepper. Toss well to coat evenly.

    Spread the seasoned potatoes in a single layer on one half of the prepared sheet pan.

    Pat the chicken thighs dry with paper towels. In the same bowl (no need to wash it!), toss the chicken with the remaining 1 tablespoon of olive oil, the juice from half of the lemon, a pinch more salt and pepper.

    Arrange the chicken thighs on the other half of the sheet pan, nestled among the potatoes. Place lemon slices over and around the chicken.

    Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C) and the potatoes are tender and lightly browned. For extra crispiness, you can broil for the last 2-3 minutes, watching carefully.

    Remove from the oven, sprinkle with fresh parsley if using, and serve immediately. Enjoy your delicious, low-effort dinner!
