Ingredients
Yield: 2 servings
Main
- 2 (5 oz) cans albacore tuna in water, drained
- 1/4 cup mayonnaise
- 1 stalk celery, finely diced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- 4 slices sturdy bread (sourdough or whole wheat recommended)
- 2 slices cheddar cheese (or provolone/swiss)
- 1 tablespoon unsalted butter
Preparation
Step 1
In a medium bowl, combine the drained tuna, mayonnaise, celery, fresh dill, lemon juice, Dijon mustard, salt, and pepper. Mix well until everything is evenly combined.
Step 2
Butter one side of each slice of bread. Place two slices, butter-side down, in a large non-stick skillet over medium heat.
Step 3
Divide the tuna mixture evenly between the two bread slices in the skillet. Top each with a slice of cheese.
Step 4
Place the remaining two bread slices (butter-side up) on top of the cheese to form two sandwiches.
Step 5
Cook for 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted and gooey.
Step 6
Remove from skillet, slice in half, and serve hot! Enjoy a quick and delicious lunch or light dinner.
Tips
- Add a pinch of red pepper flakes to the tuna mixture for a little kick.
- A thin slice of tomato or a few spinach leaves inside the melt can add extra fresh flavor.
