Ingredients
Yield: 4 servings
Main
- 12 oz linguine or spaghetti
- 1 tbsp olive oil
- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh dill, chopped
- Juice of 1 lemon (about 2 tbsp)
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain.
Step 2
While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
Step 3
Add minced garlic to the skillet and cook for 30 seconds until fragrant. Pour in white wine (or broth) and scrape up any browned bits from the bottom of the pan. Bring to a simmer and cook for 1 minute.
Step 4
Stir in heavy cream, chopped dill, and lemon juice. Bring to a gentle simmer and cook for 2-3 minutes, until slightly thickened. Season with salt and pepper.
Step 5
Add the cooked pasta and shrimp to the skillet. Toss to coat everything in the sauce. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
Step 6
Stir in grated Parmesan cheese. Serve immediately, garnished with more Parmesan and fresh dill if desired.
Tips
- Don't overcook the shrimp – they cook quickly!
- A dry white wine like Sauvignon Blanc or Pinot Grigio works well, or use chicken broth for an alcohol-free option.
- Fresh dill is key here, but in a pinch, 1 teaspoon of dried dill can be used, added with the cream.
