Ingredients
Yield: 2 servings
Main
- 1 tbsp olive oil
- ½ lb large shrimp, peeled and deveined
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup chicken or vegetable broth
- ½ cup instant couscous
- ¼ cup chopped fresh dill
- 2 tbsp lemon juice
- 1 tbsp unsalted butter
- Lemon wedges for serving (optional)
Preparation
Step 1
Heat olive oil in a medium skillet over medium-high heat. Season shrimp with salt and pepper.
Step 2
Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
Step 3
In the same skillet (no need to clean), add chicken or vegetable broth and bring to a boil. Stir in the instant couscous, cover, and remove from heat. Let stand for 5 minutes, or until all liquid is absorbed.
Step 4
Fluff the couscous with a fork. Stir in the chopped fresh dill, lemon juice, and butter until butter is melted and evenly distributed.
Step 5
Gently fold the cooked shrimp back into the couscous mixture. Taste and adjust seasoning if needed.
Step 6
Serve immediately, with lemon wedges on the side for an extra squeeze of freshness.
Tips
- For a touch of garlic flavor, sauté a minced clove of garlic with the shrimp.
- Add a handful of cherry tomatoes or baby spinach to the couscous for extra veggies and color.
