  • ½ lb large shrimp, peeled and deveined
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup chicken or vegetable broth
  • ½ cup instant couscous
  • ¼ cup chopped fresh dill
  • 2 tbsp lemon juice
  • 1 tbsp unsalted butter
  • Lemon wedges for serving (optional)

Preparation

    Heat olive oil in a medium skillet over medium-high heat. Season shrimp with salt and pepper.

    Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.

    Gently fold the cooked shrimp back into the couscous mixture. Taste and adjust seasoning if needed.
