- 1.5 lbs small red potatoes, quartered or halved if larger
- 2 tbsp olive oil, plus more for drizzling
- 1 tsp dried dill
- ½ tsp garlic powder
- ¼ tsp salt, plus more to taste
- ¼ tsp black pepper, plus more to taste
- 4 (6 oz) salmon fillets, skin on or off
- 1 lemon, half thinly sliced, half juiced
- 2 tbsp fresh dill, chopped, for garnish
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easier cleanup.
Step 2
In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, dried dill, garlic powder, salt, and pepper until evenly coated. Spread the potatoes in a single layer on one side of the prepared sheet pan.
Step 3
Roast the potatoes for 15 minutes.
Step 4
While the potatoes are roasting, pat the salmon fillets dry with a paper towel. Drizzle the salmon with the remaining 1 tablespoon of olive oil, a squeeze of fresh lemon juice, and a pinch more salt and pepper.
Step 5
After the potatoes have roasted for 15 minutes, remove the sheet pan from the oven. Arrange the salmon fillets on the other side of the sheet pan. Place a lemon slice on top of each salmon fillet.
Step 6
Return the sheet pan to the oven and bake for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and lightly browned.
Step 7
Remove from the oven, sprinkle with fresh chopped dill, and serve immediately.

- Don't overcrowd the sheet pan; use two if necessary to ensure everything roasts evenly and gets beautifully browned.
- For a touch of heat, add a pinch of red pepper flakes to the potatoes before roasting.
