  • 1 tbsp olive oil, plus more for salmon
  • 1/2 tsp salt, plus more for salmon
  • 1/4 tsp black pepper, plus more for salmon
  • 4 (6 oz) salmon fillets, skin on or off
  • 2 lemons, 1 sliced, 1 for juice
  • 2 tbsp fresh dill, chopped

For the Sauce

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • 1 clove garlic, minced
  • Pinch of salt and pepper

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). On a large sheet pan, toss the quartered potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread them in an even layer and roast for 15 minutes.

    While the potatoes roast, prepare the salmon. Pat the salmon fillets dry and season generously with salt and pepper. Lay the lemon slices on the sheet pan with the potatoes.

    After 15 minutes, add the salmon fillets to the sheet pan, nestling them among the potatoes. Drizzle the salmon lightly with olive oil. Return the pan to the oven and roast for another 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

    While the salmon cooks, whisk together the sauce ingredients: 2 tablespoons olive oil, 1 tablespoon fresh lemon juice, 1 tablespoon chopped fresh dill, minced garlic, and a pinch of salt and pepper.

    Once cooked, remove the sheet pan from the oven. Drizzle the lemon-dill sauce generously over the salmon and potatoes. Garnish with a sprinkle of extra fresh dill before serving.
