- 2 (6 oz) halibut fillets, skin off
- 1 zucchini, thinly sliced
- 1/2 pint cherry tomatoes, halved
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, half thinly sliced, half for juice
- 2 tbsp fresh dill, chopped
- Salt and black pepper to taste
Preparation
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Tear off two 12x12 inch pieces of aluminum foil. In the center of each, arrange half of the zucchini slices and cherry tomatoes.
Step 3
Place one halibut fillet on top of the vegetables in each foil packet.
Step 4
In a small bowl, whisk together the olive oil, minced garlic, juice from half a lemon, chopped dill, salt, and pepper.
Step 5
Drizzle the mixture evenly over the halibut and vegetables in each packet. Top each fillet with a few lemon slices.
Step 6
Fold the long sides of the foil together over the fish and vegetables, then crimp the edges tightly to seal the packets completely, leaving a little room for steam.
Step 7
Place the sealed packets on a baking sheet and bake for 15-18 minutes, or until the halibut is cooked through and flakes easily with a fork.
Step 8
Carefully open the packets (watch out for steam!) and serve directly from the foil or transfer to plates. Enjoy!
