Speedy Lemon Dill Halibut Packets

Craving a light, healthy, and ridiculously easy dinner? These Lemon Dill Halibut Packets are your answer! Everything cooks together in a neat little package, infusing the tender fish and crisp-tender veggies with bright lemon and fragrant dill. It's weeknight magic!

  • 2 (6 oz) halibut fillets, skin off
  • 1 zucchini, thinly sliced
  • 1/2 pint cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, half thinly sliced, half for juice
  • 2 tbsp fresh dill, chopped
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C).

  2. Step 2

    Tear off two 12x12 inch pieces of aluminum foil. In the center of each, arrange half of the zucchini slices and cherry tomatoes.

    Place one halibut fillet on top of the vegetables in each foil packet.

  4. Step 4

    In a small bowl, whisk together the olive oil, minced garlic, juice from half a lemon, chopped dill, salt, and pepper.

  5. Step 5

    Drizzle the mixture evenly over the halibut and vegetables in each packet. Top each fillet with a few lemon slices.

  6. Step 6

    Fold the long sides of the foil together over the fish and vegetables, then crimp the edges tightly to seal the packets completely, leaving a little room for steam.

  7. Step 7

    Place the sealed packets on a baking sheet and bake for 15-18 minutes, or until the halibut is cooked through and flakes easily with a fork.

  8. Step 8

    Carefully open the packets (watch out for steam!) and serve directly from the foil or transfer to plates. Enjoy!
