Looking for a weeknight hero? These Lemon Dill Chicken Cutlets are here to save the day! Thinly sliced chicken breasts get a quick pan-fry and a zesty, herby sauce that’s bursting with fresh flavor. It's so simple, yet so satisfyingly delicious.
Ingredients
Yield: 4 servings
Main
- 1.5 lbs boneless, skinless chicken breasts, thinly sliced or pounded into 1/2-inch cutlets
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (from about 1 large lemon)
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Preparation
Step 1
Pat chicken cutlets dry with paper towels. In a shallow dish, combine flour, salt, and pepper. Dredge each chicken cutlet in the flour mixture, shaking off any excess.
Step 2
Heat olive oil in a large skillet over medium-high heat. Add chicken cutlets in a single layer (you may need to work in batches). Cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken to a plate and tent with foil to keep warm.
Step 3
Reduce heat to medium. Add butter to the same skillet, scraping up any browned bits. Once melted, stir in chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, until slightly reduced.
Step 4
Stir in fresh dill. Return chicken cutlets to the skillet, spooning the sauce over them. Cook for 1-2 minutes to warm through. Garnish with fresh parsley, if using, and serve immediately.
Tips
- If your chicken breasts are thick, slice them horizontally to create thinner cutlets for quicker cooking.
- Serve these cutlets with a side of steamed green beans or a simple rice pilaf to soak up all that delicious sauce.
