  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (from about 1 large lemon)
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Preparation

  1. Step 1

    Pat chicken cutlets dry with paper towels. In a shallow dish, combine flour, salt, and pepper. Dredge each chicken cutlet in the flour mixture, shaking off any excess.

    Heat olive oil in a large skillet over medium-high heat. Add chicken cutlets in a single layer (you may need to work in batches). Cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken to a plate and tent with foil to keep warm.
