- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream (or milk for a lighter option)
- 1/4 cup fresh dill, chopped
- Juice of 1 lemon
- Salt and black pepper to taste
- Lemon wedges for serving (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Step 2
Add onion to the same skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute until fragrant.
Step 3
Stir in the uncooked orzo pasta, chicken broth, heavy cream, and the cooked chicken. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until orzo is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
Step 4
Remove from heat. Stir in fresh dill and lemon juice. Season generously with salt and black pepper to taste.
Step 5
Serve immediately, garnished with extra fresh dill and lemon wedges if desired.

- For a vegetarian version, omit chicken and add a can of drained cannellini beans or chickpeas in step 3.
