Ingredients

For the sauce
- 1/4 cup honey
- 2 tbsp soy sauce (low-sodium preferred)
- 1 tbsp rice vinegar
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1/2 tsp sriracha (optional, for heat)
- 1 tsp cornstarch mixed with 1 tbsp water (slurry)
For the stir-fry
- 1 tbsp olive oil or sesame oil
- 1 lb large shrimp, peeled and deveined
- 4 cups broccoli florets
- Optional: Sesame seeds and chopped green onions for garnish
Preparation
Step 1
In a small bowl, whisk together honey, soy sauce, rice vinegar, ginger, minced garlic, and sriracha (if using). Set aside.
Step 2
Heat olive oil in a large skillet or wok over medium-high heat. Add broccoli florets and stir-fry for 3-5 minutes until crisp-tender and brightly colored. If they start to dry out, add a splash of water and cover for a minute to steam slightly.
Step 3
Push broccoli to one side of the pan. Add shrimp to the other side and cook for 1-2 minutes per side until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
Step 4
Pour the prepared honey-garlic sauce over the shrimp and broccoli. Stir in the cornstarch slurry. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats the shrimp and broccoli.
Step 5
Remove from heat and serve immediately, garnished with sesame seeds and green onions if desired. Delicious with steamed rice or quinoa.
Tips
- Don't overcook the shrimp, as they can become rubbery. They cook very quickly!
- For a bit more substance, add some pre-cooked noodles or serve over brown rice.
- If you don't have fresh ginger, 1/2 teaspoon of ground ginger can be used in a pinch.
