When hunger strikes and you need dinner on the table *now*, this Speedy Garlic Butter Shrimp & Broccoli is your go-to! It's incredibly fast, packed with delicious flavors, and healthy too. You won't believe how easy it is to create such a satisfying meal.
Ingredients
Yield: 2 servings
Main
- 1 tbsp olive oil
- 1 head broccoli, cut into small florets
- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 3 tbsp unsalted butter
- 1/4 cup chicken or vegetable broth
- 1 tbsp fresh lemon juice
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Preparation
Step 1
Heat olive oil in a large skillet or wok over medium-high heat. Add broccoli florets and cook, stirring occasionally, until tender-crisp and slightly charred, about 5-7 minutes. Remove broccoli from the skillet and set aside.
Step 2
Add butter to the skillet. Once melted, add minced garlic and red pepper flakes (if using). Cook for 30 seconds until fragrant, being careful not to burn the garlic.
Step 3
Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
Step 4
Stir in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a quick simmer. Return the cooked broccoli to the skillet and toss everything to coat in the garlic butter sauce. Season with salt and pepper to taste.
Step 5
Serve immediately, garnished with fresh parsley. Excellent served with rice or quinoa.
Tips
- Ensure your skillet is hot before adding the broccoli to get that nice char.
- Don't overcook the shrimp, as it can become rubbery. It cooks very quickly!
