Ingredients

Main

  • 1 tbsp vegetable oil or sesame oil, plus more if needed
  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, thinly sliced or julienned
  • 3 green onions, chopped (whites and greens separated)
  • 1 tbsp minced fresh ginger
  • 2 cloves garlic, minced

Stir-Fry Sauce

  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tbsp chicken broth or water
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 1 tsp cornstarch
  • 1/2 tsp sesame oil

For Serving

  • Cooked rice or noodles
  • Sesame seeds (optional)

Preparation

  1. Step 1

    In a small bowl, whisk together all Stir-Fry Sauce ingredients until smooth. Set aside.

  2. Step 2

    Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

  3. Step 3

    Add a splash more oil to the pan if needed. Add broccoli florets, red bell pepper, and carrot. Stir-fry for 3-5 minutes until vegetables are crisp-tender. Add the white parts of the green onions, minced ginger, and minced garlic. Stir-fry for 1 minute until fragrant.

  4. Step 4

    Return the cooked chicken to the pan. Give the stir-fry sauce a quick re-whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything nicely.

  5. Step 5

    Remove from heat and stir in the green parts of the green onions. Serve immediately over cooked rice or noodles, garnished with sesame seeds if desired.

  • Prep all your ingredients (chop veggies, make sauce) before you start cooking, as stir-fries cook very quickly!
