  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice, rinsed
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/2 cup frozen peas (optional, but a nice touch!)
  • Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet (with a lid) over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.

    Add onion to the same skillet and cook until softened, about 3-5 minutes. Stir in garlic and cook for another minute until fragrant.

    Add rinsed rice to the skillet, stirring to coat with the onion and garlic. Cook for 1-2 minutes until slightly toasted.

  4. Step 4

    Pour in chicken broth and diced tomatoes (undrained). Stir in oregano, thyme, salt, and pepper. Bring to a simmer.

  5. Step 5

    Return chicken to the skillet, nestling it into the rice mixture. Bring back to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until rice is tender and liquid is absorbed. If using, stir in frozen peas during the last 5 minutes of cooking.

  6. Step 6

    Remove from heat and let stand, covered, for 5 minutes before serving. Garnish with fresh parsley.

Tips

  • For extra flavor, use a pinch of red pepper flakes.
  • If your skillet isn't oven-safe, transfer the mixture to an oven-safe dish after step 4, then cover tightly with foil and bake at 375°F (190°C) for 20-25 minutes.
