Chicken & Veggies

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 2 tbsp sesame oil, divided
  • 4 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated

Stir-Fry Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce (optional, but recommended)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 2 tbsp water

For Serving

  • Cooked rice or noodles
  • Sesame seeds, for garnish (optional)

Preparation

  1. Step 1

    In a medium bowl, toss the chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Set aside.

  2. Step 2

    In a small bowl, whisk together all the stir-fry sauce ingredients: 1/4 cup soy sauce, oyster sauce (if using), rice vinegar, brown sugar, 1 teaspoon cornstarch, and water. Set aside.

  3. Step 3

    Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

  4. Step 4

    Add the remaining 1 tablespoon of sesame oil to the skillet. Add the broccoli florets and bell pepper, and stir-fry for 3-5 minutes, until tender-crisp. Add the minced garlic and grated ginger, and cook for another minute until fragrant.

  5. Step 5

    Return the cooked chicken to the skillet with the vegetables. Give the prepared stir-fry sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.

  6. Step 6

    Serve immediately over cooked rice or noodles, garnished with sesame seeds if desired.
