  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained (or 1.5 cups frozen corn, thawed)
  • 1/2 red bell pepper, finely diced
  • 1/4 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder (optional)
  • Salt and black pepper to taste

Preparation

  1. Step 1

    In a large mixing bowl, combine the rinsed and drained black beans, drained corn, finely diced red bell pepper, and finely diced red onion.

    Add the chopped fresh cilantro to the bowl.
