Ingredients
Yield: 4 servings
Main
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 large avocado, diced
- 1/2 red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1 large jalapeño, seeded and minced (optional, for heat)
- Juice of 2 limes
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/8 tsp black pepper
Preparation
Step 1
In a large bowl, combine the rinsed and drained black beans, thawed corn, diced avocado, diced red onion, chopped cilantro, and minced jalapeño (if using).
Step 2
In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper until well combined.
Step 3
Pour the dressing over the black bean mixture. Gently toss to coat all the ingredients. Be mindful when mixing not to mash the avocado too much.
Step 4
Taste and adjust seasoning if necessary. Serve immediately, or chill for 15-20 minutes for flavors to meld.
Tips
- This salad is fantastic as a side, a dip with tortilla chips, or piled into tacos or burritos.
- For a hint of sweetness, add 1/2 cup of diced mango.
- If you prefer a milder flavor, soak the diced red onion in cold water for 10 minutes before adding to the salad to reduce its pungency.
