  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 large avocado, diced
  • 1/2 red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 large jalapeño, seeded and minced (optional, for heat)
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Preparation

  1. Step 1

    In a large bowl, combine the rinsed and drained black beans, thawed corn, diced avocado, diced red onion, chopped cilantro, and minced jalapeño (if using).

    In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper until well combined.

  3. Step 3

    Pour the dressing over the black bean mixture. Gently toss to coat all the ingredients. Be mindful when mixing not to mash the avocado too much.

    Taste and adjust seasoning if necessary. Serve immediately, or chill for 15-20 minutes for flavors to meld.

  • For a hint of sweetness, add 1/2 cup of diced mango.
  • If you prefer a milder flavor, soak the diced red onion in cold water for 10 minutes before adding to the salad to reduce its pungency.
