  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 ½ cups chicken broth
  • 1 cup uncooked long-grain white rice, rinsed
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • ¼ cup chopped fresh cilantro, for garnish (optional)
  • Optional toppings: shredded cheese, sour cream, avocado

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until lightly browned. Remove chicken from skillet and set aside.

  2. Step 2

    Add chopped onion and bell pepper to the same skillet. Cook for 5 minutes, until softened. Stir in minced garlic and cook for another minute until fragrant.

  3. Step 3

    Return chicken to the skillet. Stir in the undrained Rotel, rinsed black beans, frozen corn, chicken broth, rinsed rice, chili powder, cumin, and oregano. Season with salt and pepper.

  4. Step 4

    Bring mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and most of the liquid has been absorbed.

  5. Step 5

    Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork. Garnish with fresh cilantro and optional toppings before serving.
