  • 1/4 tsp garlic powder
  • Salt and black pepper to taste

For the Bowls

  • 2 cups cooked rice (white or brown)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained (or 1.5 cups frozen, thawed)
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Optional Toppings

  • Diced avocado or guacamole
  • Salsa
  • Sour cream or Greek yogurt
  • Lime wedges
  • Crushed tortilla chips

Preparation

  1. Step 1

    In a medium bowl, toss the chicken pieces with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
