Simple Skillet Pork and Cabbage

Sometimes you just need a hearty, no-fuss meal that comes together without a ton of effort. This Simple Skillet Pork and Cabbage is exactly that! With just a few staple ingredients, you'll create a comforting dish bursting with savory flavors and tender textures. It's truly a weeknight wonder that everyone will love.

Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb ground pork
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 lbs), cored and thinly sliced
  • 1/2 cup chicken or vegetable broth
  • 2 tbsp apple cider vinegar
  • 1 tbsp whole grain mustard (or Dijon)
  • 1 tsp dried caraway seeds (optional, but recommended!)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess grease.

  2. Step 2

Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.

  3. Step 3

Stir in the thinly sliced cabbage. Cook, stirring occasionally, for 5-7 minutes, until the cabbage begins to wilt and soften.

  4. Step 4

Pour in the chicken broth and apple cider vinegar. Stir in the whole grain mustard and caraway seeds (if using). Season generously with salt and pepper.

  5. Step 5

Bring to a simmer, then reduce heat to medium-low, cover, and cook for an additional 7-10 minutes, or until the cabbage is tender-crisp to your liking. Stir occasionally.

  6. Step 6

Taste and adjust seasonings as needed. Serve hot, garnished with fresh parsley if desired. Great on its own or with a side of crusty bread or mashed potatoes.

Tips

  • Don't worry if the cabbage seems like a lot at first; it will cook down significantly.
  • For a smoky flavor, add a pinch of smoked paprika along with the other seasonings.
  • Leftovers are delicious! This dish reheats well for next-day lunches.
