For the Sauce

  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 2 tbsp water

For the Stir-Fry

  • 1 tbsp olive oil or vegetable oil
  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • Salt and freshly ground black pepper to taste
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • Cooked rice, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Preparation

  1. Step 1

    In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic. In a separate tiny bowl, whisk cornstarch and water to create a slurry. Add the slurry to the sauce mixture and whisk until smooth. Set aside.

    Heat olive oil in a large skillet or wok over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the hot skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

    Add broccoli florets to the skillet and stir-fry for 3-4 minutes until tender-crisp. Add sliced red bell pepper and snap peas, and stir-fry for another 2-3 minutes.

    Return the cooked chicken to the skillet with the vegetables. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything evenly, about 1-2 minutes.

    Serve immediately over cooked rice, garnished with sesame seeds and green onions, if desired.
