For the Chicken & Veggies

  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 head broccoli, cut into small florets
  • 1 large carrot, thinly sliced or julienned
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced

For the Sesame Ginger Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp grated fresh ginger
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • Pinch of red pepper flakes (optional)

For Serving

  • Cooked rice or quinoa
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)

Preparation

  1. Step 1

    In a small bowl, whisk together all the sauce ingredients: soy sauce, rice vinegar, honey, ginger, sesame oil, cornstarch, and red pepper flakes (if using). Set aside.

  2. Step 2

    Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.

  3. Step 3

    Add broccoli florets and carrots to the skillet. Stir-fry for 3-4 minutes until slightly tender-crisp. Add bell pepper and minced garlic and stir-fry for another 2-3 minutes until vegetables are bright and crisp-tender.

  4. Step 4

    Return the cooked chicken to the skillet with the vegetables. Give the prepared sauce a quick re-whisk, then pour it over the chicken and vegetables. Stir continuously for 1-2 minutes until the sauce thickens and coats everything.

  5. Step 5

    Serve immediately over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions, if desired.

  • Ensure all your vegetables are prepped and sauce is mixed before you start cooking, as this dish comes together very quickly.
  • Feel free to swap in other quick-cooking vegetables like snap peas, mushrooms, or zucchini.
