For the Chicken

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil

For the Sauce

  • 1/2 cup chicken broth
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry)
  • Optional: red pepper flakes, to taste

For Serving

  • Cooked rice or quinoa
  • Steamed broccoli or snap peas
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Preparation

  1. Step 1

    In a medium bowl, toss the chicken pieces with 1 tablespoon of cornstarch until coated. Set aside.

  2. Step 2

    In a separate small bowl, whisk together all sauce ingredients (chicken broth, soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes if using). Set aside.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.

    Pour the sauce mixture into the skillet. Bring to a simmer, then add the cornstarch slurry, whisking constantly. Cook for 1-2 minutes, until the sauce thickens.

    Return the cooked chicken to the skillet, tossing to coat evenly with the sauce.

    Serve immediately over cooked rice or quinoa, alongside steamed vegetables. Garnish with sesame seeds and sliced green onions.
