Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1 tsp dried Italian seasoning
  • 1/4 cup heavy cream (optional, for extra richness)
  • 1 (16 oz) package potato gnocchi
  • 5 oz fresh spinach
  • Grated Parmesan cheese, for serving

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned and crumbled. Drain any excess fat.

  2. Step 2

Add diced onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

  3. Step 3

Stir in the diced tomatoes (with their juices), chicken broth, and Italian seasoning. Bring the mixture to a simmer, then reduce heat to medium-low and let it simmer for 5-7 minutes to allow flavors to meld. If using, stir in the heavy cream.

  4. Step 4

Add the gnocchi directly to the simmering sauce. Cook according to package directions (usually 2-3 minutes) until they float to the surface and are tender.

  5. Step 5

Stir in the fresh spinach a handful at a time, allowing it to wilt into the sauce. Cook for 1-2 minutes until all the spinach has wilted.

  6. Step 6

Serve hot, garnished with plenty of grated Parmesan cheese.

Tips

  • Use turkey or chicken sausage for a lighter twist.
  • Add a splash of white wine with the broth for added depth of flavor.
  • Frozen spinach can be used, just thaw and squeeze out excess water before adding.
