  • 1 tbsp olive oil
  • 1 lb smoked sausage (kielbasa, or similar), sliced into 1/2-inch rounds
  • 1 medium onion, chopped
  • 4 cups green cabbage, cored and roughly chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 cup chicken broth or water
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove sausage from the skillet and set aside, leaving any rendered fat in the pan.

  2. Step 2

    Add chopped onion to the skillet and cook until softened, about 4-5 minutes. Add chopped cabbage and minced garlic. Cook, stirring occasionally, until cabbage starts to soften and turn vibrant green, about 5-7 minutes.

  3. Step 3

    Stir in smoked paprika and cook for 1 minute more. Pour in chicken broth (or water) and bring to a simmer. Cover the skillet and cook for another 5-7 minutes, or until the cabbage is tender-crisp.

  4. Step 4

    Return the cooked sausage to the skillet. Stir everything together. Season with salt and black pepper to taste.

  5. Step 5

    Serve hot, garnished with fresh chopped parsley if desired. Great on its own or with a side of crusty bread.

  • If you prefer your cabbage softer, cook it for a few extra minutes with the lid on.
