  • 2 lbs bone-in, skin-on chicken thighs or drumsticks
  • 1.5 lbs small potatoes (such as baby Yukon Golds or red potatoes), quartered
  • 1 red onion, cut into 1-inch wedges
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish

Preparation

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
