- 2 lbs Yukon gold or red potatoes, peeled and cut into 1/2-inch cubes
- 3 cups broccoli florets (about 1 large head)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk (whole or 2%)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp mustard powder (optional, enhances cheese flavor)
- Salt and black pepper to taste
- 2 cups shredded sharp cheddar cheese, divided
- 1/4 cup panko breadcrumbs (optional, for topping)
Preparation
Step 1
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2
Place cubed potatoes in a large pot of salted cold water. Bring to a boil and cook for 5-7 minutes, until just tender but still firm. Add broccoli florets to the pot for the last 2-3 minutes of cooking. Drain well.
Step 3
While potatoes and broccoli cook, make the cheese sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to form a roux.
Step 4
Gradually whisk in milk, a little at a time, until smooth. Continue to whisk until the sauce thickens and comes to a gentle simmer, about 3-5 minutes. Stir in garlic powder, onion powder, mustard powder (if using), salt, and pepper.
Step 5
Remove from heat and stir in 1 1/2 cups of shredded cheddar cheese until melted and smooth.
Step 6
Gently combine the drained potatoes and broccoli with the cheese sauce in the baking dish. Top with the remaining 1/2 cup of shredded cheddar cheese and panko breadcrumbs (if using).
Step 7
Bake for 20-25 minutes, or until bubbly and the topping is golden brown. Let stand for a few minutes before serving.

- For a slightly healthier twist, use milk instead of heavy cream in the sauce.
