Ingredients

Yield: 3 servings

Main

  • 1 lb large shrimp, peeled and deveined (thawed if frozen)
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup sweet chili sauce
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • Sesame seeds, for garnish (optional)
  • Cooked rice, for serving (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Step 2

In a large bowl, toss the broccoli florets with olive oil, salt, and pepper until lightly coated. Spread the broccoli in a single layer on one half of the prepared baking sheet.

  3. Step 3

Bake the broccoli for 10 minutes to give it a head start, as it takes longer to cook than shrimp.

  4. Step 4

While the broccoli bakes, pat the shrimp dry with paper towels. In a separate small bowl, whisk together the sweet chili sauce, lime juice, minced garlic, and grated ginger (if using).

  5. Step 5

After 10 minutes, remove the baking sheet from the oven. Add the shrimp to the other half of the baking sheet. Drizzle half of the sweet chili sauce mixture over the shrimp and broccoli, tossing gently to coat.

  6. Step 6

Return the baking sheet to the oven and bake for another 8-10 minutes, or until the shrimp are pink and opaque and the broccoli is tender-crisp. Avoid overcooking the shrimp, as they can become rubbery.

  7. Step 7

Remove from oven, drizzle with the remaining sweet chili sauce, and garnish with sesame seeds if desired. Serve immediately, perhaps with a side of rice.

Tips

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • Ensure shrimp are fully thawed and patted dry for best results.
  • If you don't have parchment paper, you can lightly grease the baking sheet, but cleanup will be easier with it.
