When dinner needs to be both delicious AND easy, turn to this Sheet Pan Sweet Chili Chicken and Green Beans! It's a colorful, flavorful meal that cooks all on one pan, meaning minimal fuss and maximum flavor. The chicken turns out tender and juicy, the green beans perfectly crisp-tender, all coated in a crave-worthy sweet chili sauce. Win-win!
Ingredients
Yield: 4 servings
Main
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1/2 cup sweet chili sauce (like Mae Ploy)
- 1 tbsp soy sauce (low sodium preferred)
- 1 clove garlic, minced
- 1/2 tsp fresh ginger, grated (optional)
- Sesame seeds and chopped green onions, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, toss the chicken pieces with olive oil, salt, and pepper. In the same bowl (no need to wash!), toss the trimmed green beans with olive oil, salt, and pepper.
Step 3
Spread the chicken and green beans in a single layer on the prepared baking sheet, ensuring not to overcrowd the pan. If your baking sheet is too small, use two.
Step 4
Roast for 15 minutes.
Step 5
While the chicken and green beans roast, prepare the sauce: In a small bowl, whisk together the sweet chili sauce, soy sauce, minced garlic, and grated ginger (if using).
Step 6
After 15 minutes, remove the baking sheet from the oven. Drizzle half of the sweet chili sauce mixture over the chicken and green beans. Toss everything directly on the baking sheet to coat evenly.
Step 7
Return to the oven and bake for another 8-10 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C) and the green beans are tender-crisp with some light charring.
Step 8
Remove from oven, drizzle with remaining sauce, and garnish with sesame seeds and green onions, if desired. Serve immediately, perhaps with rice or noodles.
Tips
- Ensure chicken pieces are roughly the same size for even cooking.
- Don't overcrowd the sheet pan; otherwise, ingredients will steam instead of roast and won't get that lovely caramelization.
- For a spicier kick, add a dash of sriracha to the sweet chili sauce.
- Other quick-cooking vegetables like bell peppers or snap peas can be added with the green beans.
