- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 red bell pepper, cored and cut into 1-inch pieces
- 1 head broccoli, cut into florets
- 1 cup snap peas (or green beans)
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/2 cup sweet chili sauce
- 1 tbsp soy sauce or tamari
- 1 tsp grated fresh ginger
- Cooked rice or quinoa, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, combine the chicken pieces, red bell pepper, broccoli florets, and snap peas. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.

Spread the chicken and vegetables in a single layer on the prepared baking sheet.
Step 4
Roast for 15 minutes. While roasting, whisk together the sweet chili sauce, soy sauce, and grated ginger in a small bowl.
Step 5
Remove the baking sheet from the oven. Drizzle the sweet chili sauce mixture over the chicken and vegetables. Toss gently on the sheet pan to coat everything.

Return to the oven and roast for another 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp and slightly caramelized.

Serve hot over cooked rice or quinoa, garnished with sesame seeds and green onions if desired.

- Don't overcrowd the baking sheet, or the chicken and veggies will steam instead of roast. Use two sheets if necessary.
