Sheet Pan Sweet Chili Chicken

Sheet pan meals are truly magical, and this Sweet Chili Chicken version is no exception! With minimal cleanup and maximum flavor, it's a perfect contender for busy weeknights. The chicken gets deliciously caramelized alongside crisp-tender veggies, all coated in a craveable sweet chili sauce.

Ingredients

Yield: 4 servings

Main

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 head broccoli, cut into florets
  • 1 cup snap peas (or green beans)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce or tamari
  • 1 tsp grated fresh ginger
  • Cooked rice or quinoa, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a large bowl, combine the chicken pieces, red bell pepper, broccoli florets, and snap peas. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.

  3. Step 3

Spread the chicken and vegetables in a single layer on the prepared baking sheet.

  4. Step 4

Roast for 15 minutes. While roasting, whisk together the sweet chili sauce, soy sauce, and grated ginger in a small bowl.

  5. Step 5

Remove the baking sheet from the oven. Drizzle the sweet chili sauce mixture over the chicken and vegetables. Toss gently on the sheet pan to coat everything.

  6. Step 6

Return to the oven and roast for another 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp and slightly caramelized.

  7. Step 7

Serve hot over cooked rice or quinoa, garnished with sesame seeds and green onions if desired.

Tips

  • Don't overcrowd the baking sheet, or the chicken and veggies will steam instead of roast. Use two sheets if necessary.
  • For extra heat, add a pinch of red pepper flakes to the sweet chili sauce.
  • Any quick-cooking vegetables like zucchini, mushrooms, or asparagus would also work well here.
