  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 yellow bell pepper, cored and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1/2-inch thick half-moons
  • 1/2 red onion, cut into wedges
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley or dill for garnish (optional)
  • Feta cheese crumbles for serving (optional)

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the chicken pieces, red and yellow bell peppers, zucchini, red onion, and Kalamata olives.

    In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper.

    Pour the dressing over the chicken and vegetables, tossing until everything is evenly coated.

    Spread the chicken and vegetables in a single layer on the prepared baking sheet. Ensure there's enough space for even cooking; use two sheets if necessary.

    Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. You can stir once halfway through cooking for even browning.
