- 1/2 red onion, cut into wedges
- 1/2 cup pitted Kalamata olives, halved
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley or dill for garnish (optional)
- Feta cheese crumbles for serving (optional)
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the chicken pieces, red and yellow bell peppers, zucchini, red onion, and Kalamata olives.

In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper.

Pour the dressing over the chicken and vegetables, tossing until everything is evenly coated.
