Ingredients

Yield: 4 servings

Main

  • 1 lb pre-cooked chicken sausage, thinly sliced
  • 1 head broccoli, cut into florets
  • 1 large bell pepper (any color), cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, half sliced into rounds, half for juicing
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a large bowl, combine sliced chicken sausage, broccoli florets, bell pepper pieces, and red onion wedges.

  3. Step 3

Drizzle with olive oil, then sprinkle with oregano, thyme, garlic powder, salt, and black pepper. Toss well to ensure everything is evenly coated.

  4. Step 4

Spread the mixture in a single layer on the prepared baking sheet. Tuck lemon slices among the vegetables and sausage.

  5. Step 5

Roast for 20-25 minutes, or until vegetables are tender-crisp and slightly caramelized, and sausage is heated through. Toss halfway through cooking for even browning.

  6. Step 6

Remove from oven, squeeze fresh lemon juice over the entire sheet pan, and garnish with fresh parsley if desired. Serve immediately.

Tips

  • Don't overcrowd the pan; use two baking sheets if necessary for better caramelization.
  • Feel free to swap in other quick-cooking vegetables like zucchini, cherry tomatoes, or asparagus.
  • Serve this dish on its own, or with a side of quinoa or couscous.
