  • 1 lb bell peppers (any color), cored and chopped into 1-inch pieces
  • 1 medium zucchini, quartered lengthwise and sliced into 1/2-inch pieces
  • 1 medium red onion, cut into 1/2-inch wedges
  • 3 tablespoons olive oil
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Preparation

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare vegetables: In a very large bowl, combine broccoli florets, chopped bell peppers, zucchini, and red onion. Drizzle with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to ensure all vegetables are evenly coated.

    Roast: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Ensure they aren't overcrowded; use two baking sheets if necessary to allow them to roast rather than steam.
