Ingredients

Yield: 4 servings

Main

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 green bell pepper, chopped into 1-inch pieces
  • 1 red onion, cut into 1-inch wedges
  • 1 cup cherry tomatoes
  • 1/2 cup pitted Kalamata olives
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Feta cheese, crumbled, for serving (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a large bowl, combine chicken pieces, red bell pepper, green bell pepper, red onion, cherry tomatoes, and Kalamata olives.

  3. Step 3

In a small bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, dried thyme, salt, and pepper.

  4. Step 4

Pour the dressing over the chicken and vegetables. Toss well to ensure everything is evenly coated.

  5. Step 5

Spread the chicken and vegetable mixture in a single layer on the prepared baking sheet.

  6. Step 6

Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and vegetables are tender-crisp. For a little extra browning, you can broil for the last 2-3 minutes, watching carefully to prevent burning.

  7. Step 7

Serve immediately, garnished with fresh parsley and crumbled feta cheese, if desired. This pairs wonderfully with couscous or a simple green salad.

Tips

  • Cut vegetables into similar sizes to ensure even cooking.
  • Feel free to add other Mediterranean-friendly veggies like zucchini or eggplant.
