- 2 (6 oz) cod fillets, about 1-inch thick
- 1 tbsp olive oil
- 1 lemon, half sliced into rounds, half for juice
- 1 cup broccoli florets
- 1 cup asparagus spears, trimmed
- 1 tsp dried dill
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a medium bowl, toss broccoli florets and asparagus spears with 1/2 tablespoon olive oil, half of the dried dill, garlic powder, salt, and pepper.
Step 3
Place the seasoned vegetables on one side of the prepared baking sheet. Roast for 7-8 minutes.
Step 4
While vegetables are roasting, pat cod fillets dry. Drizzle with remaining 1/2 tablespoon olive oil, then sprinkle with the remaining dill, salt, and pepper. Squeeze half of the lemon juice over the cod.
Step 5
After the vegetables have roasted for 7-8 minutes, remove the baking sheet from the oven. Place the cod fillets on the other side of the baking sheet, arranging lemon slices on top of each fillet.
Step 6
Return to the oven and bake for another 8-12 minutes, or until the cod is opaque and flakes easily with a fork, and vegetables are tender-crisp. Cooking time will vary based on thickness of cod.
Step 7
Serve immediately, garnished with fresh parsley if desired.
