Ingredients
Yield: 4 servings
Main
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb small potatoes (e.g., creamer or baby), quartered
- 1 head broccoli, cut into florets
- 1 red bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 3 tbsp olive oil
- Juice of 1 lemon
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
Step 2
In a large bowl, combine the chicken thighs, potatoes, broccoli, red bell pepper, and red onion.
Step 3
Drizzle with olive oil and lemon juice. Sprinkle in the dried oregano, dried thyme, garlic powder, salt, and pepper. Toss everything well to ensure all ingredients are evenly coated.
Step 4
Spread the chicken and vegetables in a single layer on the prepared baking sheet. Avoid overcrowding, as this will steam rather than roast the vegetables. Use two baking sheets if necessary.
Step 5
Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender and slightly caramelized. Halfway through cooking, give everything a good stir to ensure even browning.
Step 6
Serve immediately as a complete meal. A sprinkle of fresh parsley or a squeeze of extra lemon juice would be a lovely finish.
Tips
- Adjust the vegetables to your liking! Zucchini, carrots, or Brussels sprouts would also be delicious.
- For crispier chicken, pat the chicken thighs very dry with paper towels before tossing with the oil and seasonings.
