Sheet Pan Lemon Herb Chicken Sausage & Veggies

Dinner just got easier (and tastier!) with this delightful sheet pan recipe. We're talking minimal cleanup, maximum flavor, and a wholesome meal that's ready in a flash. The chicken sausage pairs perfectly with colorful veggies, all roasted together with a zesty lemon herb dressing.

Ingredients

Yield: 4 servings

Main

  • 1 lb pre-cooked chicken sausage, sliced into 1/2-inch rounds
  • 1 head broccoli, cut into bite-sized florets
  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 zucchini, quartered lengthwise and sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lemon
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a large bowl, combine the sliced chicken sausage, broccoli florets, red bell pepper, and zucchini.

  3. Step 3

Drizzle the vegetables and sausage with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss everything together until evenly coated.

  4. Step 4

Spread the mixture in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan; use two pans if necessary to ensure everything roasts evenly.

  5. Step 5

Roast for 20-25 minutes, or until the vegetables are tender-crisp and slightly caramelized, and the sausage is heated through. Flip halfway through cooking for even browning.

  6. Step 6

Remove from the oven, squeeze fresh lemon juice over the top, and toss gently. Garnish with fresh parsley if using.

  7. Step 7

Serve hot as is, or alongside rice or quinoa for a complete meal.

Tips

  • Feel free to swap in your favorite quick-cooking veggies like mushrooms, cherry tomatoes, or asparagus.
  • For an extra kick, add a pinch of red pepper flakes with the seasoning.
  • Always ensure your sheet pan isn't too crowded for the best roasting results.
