Sheet Pan Lemon Dill Salmon with Green Beans

Dinner doesn't get much simpler or tastier than this! Our sheet pan lemon dill salmon with green beans is a vibrant, healthy meal that cooks up on a single pan. It's perfect for a quick weeknight dinner when you want maximum flavor with minimal effort and cleanup.

Ingredients

Yield: 2 servings

Main

  • 2 (6 oz) salmon fillets, skin on or off
  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 lemon, half thinly sliced, half juiced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

On the prepared baking sheet, toss the trimmed green beans with 1 tablespoon of olive oil, half of the minced garlic, salt, and pepper. Spread them out in a single layer.

  3. Step 3

Pat the salmon fillets dry with paper towels. Place them on the same baking sheet, nestled among the green beans. Drizzle the salmon with the remaining 1 tablespoon of olive oil, lemon juice, remaining minced garlic, dill, salt, and pepper.

  4. Step 4

Top each salmon fillet with a few lemon slices. Arrange a few extra lemon slices around the green beans as well.

  5. Step 5

Bake for 12-18 minutes, depending on the thickness of your salmon, or until the salmon is cooked through and flakes easily with a fork, and the green beans are tender-crisp. If desired, broil for the last 1-2 minutes to get a little extra char on the beans and salmon.

  6. Step 6

Remove from the oven and serve immediately. This beautiful, flavorful meal is ready to enjoy!

Tips

  • Don't overcrowd the pan; use two if needed to ensure everything cooks evenly and gets a nice sear.
  • You can swap green beans for asparagus or broccoli for similar cooking times.
  • A sprinkle of red pepper flakes adds a nice little kick if you like heat.
