  • 1 lb baby potatoes, quartered (or cut into 1-inch pieces)
  • 1 tbsp olive oil, plus more for cod
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper, divided
  • 2 (6 oz) cod fillets, fresh or thawed
  • 1 tbsp fresh dill, chopped, plus more for garnish
  • 1 lemon, half thinly sliced, half for juice
  • Optional: 1 cup asparagus spears, trimmed

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Step 2

    On the baking sheet, toss the quartered potatoes with 1 tbsp olive oil, garlic powder, 1/4 tsp salt, and 1/8 tsp pepper. Spread them in a single layer.

  3. Step 3

    Roast the potatoes for 15 minutes. If adding asparagus, add it to the pan now and toss gently with the potatoes.

  4. Step 4

    While potatoes roast, pat cod fillets dry with paper towels. Drizzle lightly with olive oil, then sprinkle with the remaining 1/4 tsp salt and 1/8 tsp pepper, and 1 tbsp chopped dill. Place lemon slices on top of each fillet.

  5. Step 5

    After the potatoes have roasted for 15 minutes, remove the pan from the oven. Push the potatoes to one side of the pan and place the cod fillets on the other side. Return to the oven.

  6. Step 6

    Bake for another 10-15 minutes, or until the cod is opaque and flakes easily with a fork, and the potatoes are tender and lightly browned. Cooking time for cod will depend on its thickness.

  7. Step 7

    Remove from oven. Squeeze fresh lemon juice over the cod and potatoes. Garnish with additional fresh dill if desired. Serve immediately.
