  • 1 ½ lbs baby potatoes (creamer or fingerling), halved or quartered
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lb cod fillets (4-5 oz each), patted dry
  • 2 tbsp olive oil (for cod)
  • 1 lemon, half thinly sliced, half juiced
  • 2 tbsp fresh dill, chopped
  • Optional: 1 cup chopped asparagus or green beans

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

    On the baking sheet, toss the halved or quartered potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread in a single layer. Roast for 15 minutes.

  3. Step 3

    While potatoes roast, prepare the cod: Pat cod fillets very dry. In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, half of the chopped fresh dill, salt, and pepper. Place cod fillets on a plate and pour the mixture over them, turning to coat. Arrange lemon slices over each fillet.

  4. Step 4

    After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side of the sheet. Add the cod fillets (with lemon slices) to the other side. If using, add asparagus or green beans tossed with a drizzle of olive oil, salt, and pepper to the sheet as well.

  5. Step 5

    Return the baking sheet to the oven and bake for another 10-15 minutes, or until the cod is opaque and flakes easily with a fork, and the vegetables are tender. Cooking time for fish depends on thickness.

  6. Step 6

    Remove from oven. Garnish with the remaining fresh dill. Serve immediately.

  • Don't overcrowd the baking sheet; use two if necessary to ensure everything roasts evenly and gets a nice sear.
  • You can swap cod for other flaky white fish like haddock or halibut.
