- 1 lb pork tenderloin, cut into 1-inch thick medallions
- 1 large head of broccoli, cut into bite-sized florets
- 2 tbsp olive oil
- Salt and black pepper to taste
For the Honey Garlic Glaze
- 3 tbsp honey
- 2 tbsp soy sauce (low sodium preferred)
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1/2 tsp grated fresh ginger (optional)
- 1/4 tsp red pepper flakes (optional, for a kick)
For Garnish (optional)
- Sesame seeds
- Chopped green onions
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
Step 2
In a small bowl, whisk together all glaze ingredients: honey, soy sauce, rice vinegar, minced garlic, ginger (if using), and red pepper flakes (if using). Set aside.
Step 3
In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on one half of the prepared sheet pan.
Step 4
Add the pork medallions to the same large bowl. Drizzle with the remaining 1 tablespoon of olive oil, salt, and pepper. Toss to coat. Arrange the pork on the other half of the sheet pan, leaving some space between pieces.
Step 5
Bake for 10 minutes. Remove the sheet pan from the oven. Brush half of the honey-garlic glaze over the pork and broccoli. Stir the broccoli slightly to ensure even coating.
Step 6
Return to the oven and bake for another 10-15 minutes, or until the pork is cooked through (internal temperature of 145°F / 63°C) and the broccoli is tender-crisp with some charred edges. During the last 5 minutes, brush with the remaining glaze.
Step 7
Remove from oven, let rest for a couple of minutes, then garnish with sesame seeds and green onions if desired. Serve immediately, perhaps with a side of rice or quinoa.

- For extra crispy broccoli, make sure your sheet pan isn't overcrowded. Use two pans if necessary.
