- 1 lb smoked sausage (kielbasa or similar), sliced into 1/2-inch rounds
- 1 medium onion, sliced
- 4 cups green cabbage, cored and roughly chopped (about 1/2 a medium head)
- 1 medium apple, cored and chopped (optional, for sweetness)
- 1/2 cup chicken broth (or water)
- 1 tbsp apple cider vinegar
- 1 tsp caraway seeds (optional, but recommended!)
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook, stirring occasionally, until browned and slightly crispy, about 5-7 minutes. Remove sausage and set aside, leaving any rendered fat in the skillet.
Step 2
Add sliced onion to the skillet and cook until softened, about 3-4 minutes. If using, add chopped apple and cook for another 2-3 minutes.

Add chopped cabbage to the skillet. Cook, stirring frequently, until it starts to wilt, about 5-7 minutes. It will seem like a lot of cabbage at first, but it will cook down.

Pour in chicken broth and apple cider vinegar. Stir in caraway seeds (if using). Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, or until cabbage is tender-crisp.
Step 5
Return cooked sausage to the skillet. Stir to combine and heat through for 1-2 minutes. Season with salt and pepper to taste.

Serve hot as is, or alongside a dollop of mustard or a side of crusty bread.
