- 4 oz egg noodles (medium width)
- 2 cups chicken broth
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1/2 tsp caraway seeds (optional, but recommended!)
- Salt and black pepper to taste
- Fresh dill or parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes. Drain any excess fat and set sausage aside.
Step 2
Add sliced cabbage and onion to the same skillet. Cook, stirring occasionally, until the cabbage begins to soften and wilt, about 5-7 minutes. Add minced garlic and caraway seeds (if using), and cook for another minute until fragrant.
Step 3
Return the cooked sausage to the skillet. Stir in the uncooked egg noodles, chicken broth, apple cider vinegar, and soy sauce. Bring the mixture to a simmer.
Step 4
Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until the noodles are tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Step 5
Season with salt and black pepper to taste. If desired, garnish with fresh dill or parsley before serving.
