  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium apples (e.g., Gala, Honeycrisp), cored and chopped into 1/2-inch pieces
  • 1 lb baby potatoes, quartered (or other potatoes, diced)
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes. Remove sausage from the skillet and set aside, leaving rendered fat in the pan.

    Add chopped onion to the skillet and cook until softened, about 4-5 minutes. Stir in minced garlic and cook for another minute until fragrant.

    Add quartered potatoes and apples to the skillet. Cook for 5-7 minutes, stirring occasionally, until apples start to soften slightly and potatoes begin to brown.

    Pour in chicken broth and stir in Dijon mustard and fresh thyme. Bring to a simmer, then reduce heat to medium-low. Cover the skillet and cook for 10-12 minutes, or until potatoes are tender, stirring once or twice.

    Return the cooked sausage to the skillet. Stir everything together and cook for 2-3 minutes more to heat through. Season with salt and freshly ground black pepper to taste.
