Ingredients
Yield: 4 servings
Main
- 8 oz egg noodles (or ramen noodles, discard seasoning packet)
- 1 tbsp vegetable oil
- 1 lb pork tenderloin, thinly sliced against the grain
- 1 small onion, thinly sliced
- 2 cups mixed stir-fry vegetables (e.g., bell peppers, carrots, snap peas)
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
For the Sauce
- 1/4 cup soy sauce
- 2 tbsp oyster sauce (or hoisin for vegetarian)
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1 tsp cornstarch
- 2 tbsp water
Garnish
- Sesame seeds
- Sliced green onions
Preparation
Step 1
Cook noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking. Set aside.
Step 2
In a small bowl, whisk together all sauce ingredients: soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water. Set aside.
Step 3
Heat vegetable oil in a large skillet or wok over high heat. Add sliced pork and cook, stirring frequently, until browned and cooked through, about 3-5 minutes. Remove pork from the skillet and set aside.
Step 4
Add sliced onion and mixed stir-fry vegetables to the same skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp. Add minced garlic and grated ginger and stir-fry for 1 minute more until fragrant.
Step 5
Return the cooked pork to the skillet. Add the cooked noodles and pour the prepared sauce over everything. Toss constantly for 1-2 minutes until the sauce has thickened and coated the noodles and pork evenly.
Step 6
Serve immediately, garnished with sesame seeds and sliced green onions.
Tips
- Prep all your ingredients (chop veggies, slice pork, mix sauce) before you start cooking, as stir-fries cook quickly.
- Feel free to swap pork for chicken, beef, or even firm tofu.
- Adjust the sweetness or saltiness of the sauce to your liking.
